Easy Greek Salad

Ingredients

-Lettuce/ Wild Rocket

-Red Pepper

-Green Pepper

-Red Onion

-Tomatoes

-Cheese

-1 Cup of Black Olives

-1 Large English Cucumber

-3 Tablespoonful of Extra Virgin Oil

-1 Tablespoonful of fresh lemon juice extracts

-2 Tablespoonful of finely chopped fresh Parsley

-1/2 Tablespoonful of Dry Oregano

-Salt

-Black Pepper

-1/4 Teaspoonful of minced Garlic (Optional)

Procedure

a)  Preparing the dressing

>Mix 3 tablespoonful of extra virgin oil

>1 Tablespoonsful of fresh lemon juice extracts

>Add two tablespoonful of fresh finely chopped parsley

>Add ½ tablespoonful of Oregano

>Add ¼ teaspoonful of salt

>Add a little Pepper for taste

>Add a pinch of garlic and mix well

>Refrigerate till ready to use

b)  Preparing the salad

>Wash and disinfect all the vegetables

>Dry them using a clean kitchen towel or clean paper towel

>Slice all the vegetables starting with your lettuce/wild rocket into small chunks

>Put them in a large bowl

>Slice the red pepper by first removing the seeds and the veins, cut into thin strips/cubes

>Place the red pepper in the same bowl with the lettuce/wild rocket

>Slice the green pepper by first removing the seeds and the veins, cut into thin strips/cubes

>Place the green pepper in the same bowl with the lettuce/wild rocket

>Then add the black olives

>Slice half a red onion (very thin)

>Cut the tomatoes in half for large in ¼ or chunks

>Add them into the lettuce/wild rocket

>Toss everything together

>Then add the cheese.

>The salad is now ready to be served

>The dressing is put on the salad when serving for freshness purposes

>Acid in the dressing softens the lettuce a bit.
